Biskuttini bil-gunglien by Sharon Cuschieri

Ingredients 500g self raising flour

200g margarine

200g sugar

2 eggs

1 lemon rind

Preparation

1- Place 200g sugar, 1 lemon rind and 1 tsp vanilla essence in the mixing bowl and grind 10 sec/speed 10.

2- Scrape down the sides with the spatula. Add 500g self raising flour, 200g margarine cut in pieces and 2 eggs and then mix 10 sec/speed 5.

3- Scrape down the sides and now knead/1 min. Place the dough on a silicone mat with some flour and form in a small ball. Leave to rest in fridge for 15 minutes, preheat the oven at a temperature of 180degrees.

4- Place dough on the silicone matt and divide the dough in 4 small balls.

5- Roll each ball into a long line and cut each section in approximately 13cm to form a ring. Wet with water the ends of the ring to stick together and the top part of the ring, then dip the ring in the sesame seeds.

6- Place each ring on a baking dish and bake in a preheated oven 180degrees for 15 minutes.

7- When ready place them on a rack to cool down, then place them in a air tight container
